Taco Salad in a Mason Jar

Ingredients

  • 2 wide mouth quart size mason jars

  • 1/2 c salsa

  • 3 oz container plain greek yogurt

  • 1 c cherry tomatoes, halved (I didn’t use this but you can)

  • 1 c black beans, drained and rinsed

  • 1 c corn

  • 1/2 c avocados, peeled and chopped (I didn’t use this but you can)

  • 1/2 pepper jack cheese, grated

  • 2 c chopped romaine lettuce (I used a romaine/spinach mix)

  • 1 cup ground beef

Instructions

  1. Mix salsa and yogurt for dressing. Taste to make sure flavor and consistency are what you are looking for. Adding yogurt will thicken and make the dressing, while salsa will thin and spice up. If you want to just add spice, use your favorite chili powder.

  2. Put 1/4 cup of dressing in the bottom of the jar.

  3. Add corn and beans

  4. Cook ground beef and drain before putting 1/2 a cup in the jar,

  5. If you want to add avocado, tomatoes or onions, layer them after the protein.

  6. Top with lettuces and cheese.

  7. If you add everything from number 5, you will need to use a little larger jar.

  8. Enjoy

  9. Yields 2 Jars
